Khichdi has an image problem. It is what you are given when you are unwell, which has left most people assuming it is meant to be bland. Made properly, it is not — it is one of the most satisfying things you can eat, and the fact that it is also light is a bonus rather than the point.
The difference is almost entirely in the tempering. A khichdi that is boiled and served is thin and dull. A khichdi finished with a proper ghee-and-jeera tadka, poured over just before it leaves the kitchen, is rich, nutty and aromatic without being heavy.
