How We Make It

We use Kashmiri rajma — smaller and darker than the common variety, with a thinner skin that breaks down more readily. Soaked overnight, then simmered slowly with onion, ginger, garlic and a restrained hand on the tomato. No cream. The body comes from the beans themselves.
